Meat-filled blintzes are not widely known, unlike cheese and fruit filling. As for the meat, my grandmother, from Ukraine, used ground beef *lung*, a rather unusual choice, but it works. This meat is very rubbery and has a distinct flavor, but I found I like it. My brother and I made some from her recipe (same as the one in this video, essentially) and it came out perfect. The choices for the meats that can be used here are enormous. Experiment!
