When you do marinated salad do you put salt, vinegar, sugar in it. Do you heat up the brine to pour over vegs and then water bath for how long. 10-15 minutes?
That recipe doesn't even have to be water bathed. You fill your jars 1/4 inch to the top and put wax paper over the top and screw down the lids and band. It will keep for a year on the shelf. This is a great depression method back in the day when they'd take veggies that wasn't enough to do much with and mix them up and make a vinegar and water brine mixed with sugar and spices. It left the veggies with a crunch. But filling the jar 1/4 inch from top gets the air out and adding the wax paper with the lid and band gives a perfect seal.
OMG I have canned the coleslaw before and LOVE it, but have never tried the marinated salad! I eat a rendition of Greek salad nearly every day during the summer and it will be great to put some of that on the shelf when tomato season is well behind us! Thank you SO much for passing these along!
