Looks great, and I love your stuff. But why put the sofrito in after the meat is cooked? Shouldn't the veggies normally be cooked first, and then the meat added?
Anglo bolegnese. Way too much meat. Substitute some meat with breadcrumbs from leftover bread. Bolognese is meant to be a tomato and meat sauce not stewed beef mince, and whoever doesn't put basil in a tomato sauce should be burned at the stake. Terrible recipe.
